Unlike fermented rooibos, green rooibos undergoes minimal oxidation after harvesting. This helps preserve higher concentrations of naturally occurring polyphenols, including aspalathin and nothofagin—two flavonoids that are strongly associated with the distinctive chemistry of Aspalathus linearis.

Research has explored these compounds across several biological processes relevant to skin, including antioxidant activity, oxidative-stress signalling and inflammatory pathways.
